Ingredients

1 cup brown basmati rice (soaked)

1 medium potato, diced

1 large carrot, chopped

½ cup cauliflower florets

½ cup zucchini slices

½ cup mixed bell peppers

1 small onion, finely chopped

2 tsp machboos spice mix

A pinch of cinnamon and turmeric

1 tbsp tomato paste

1 tsp olive oil

2 cups water or vegetable broth

Salt and pepper to taste

Lemon wedge for serving

Fresh dill or coriander for garnish

Method

Heat olive oil in a non-stick pot and sauté the onions until soft.

Add all vegetables and cook for 5 minutes, stirring occasionally.

Mix in tomato paste and spices; stir until well combined.

Add the soaked rice and pour in water or broth.

Bring to a boil, then reduce heat, cover, and simmer for 25–30 minutes or until rice is cooked.

Garnish with fresh herbs and a squeeze of lemon before serving
