Ingredients

1 cup almond flour

2 tbsp melted coconut oil (or light vegetable oil)

2–3 tbsp pure honey or maple syrup (adjust to taste)

½ tsp vanilla extract

A pinch of salt

12 pistachios or almonds for topping

Method

In a bowl, mix almond flour, oil, honey/maple syrup, vanilla, and salt until a soft dough forms.

Shape into small balls and gently flatten them.

Top each with one pistachio or almond

Bake at 170°C (340°F) for 10–12 minutes or until the edges start to turn golden.

Let cool completely before serving – they’ll firm up as they cool.
